This Week’s Meal Plan: 8/15/2011



I have been enjoying my usual zucchini bread recipe, but after making chocolate zucchini cake I have decided to find a chocolate zucchini bread recipe – so it looks like that might be my new experiment for the week.  Oh and we tried peanut butter popcorn for a snack, but not so sure about that one – may need to work on it a bit.  The kids enjoyed the left-overs mixed with pistachios and raisins = trail mix for the week.  One more thing to try - making my own english muffins, would like to find a good whole grain recipe - if you know of any, please send them my way!

Breakfast
Leek & Veggie Fritatta; Cottage Cheese pancakes (from freezer); Yogurt and granola with fresh fruit; Stuffed French toast (x2); Sunrise sandwiches (egg and cheese on english muffins); Hot cereal mix

Lunch
Left-overs; PB &J; BLTs or whatever we can figure out from what is in the fridge and pantry

Snacks
Peanut butter popcorn; Frozen banana bites; Chocolate zucchini bread; Frozen smoothie pops; Popcorn trail mix; Chocolate Tapioca pudding

Dinner
Warm red cabbage salad with chicken and gorgonzola; Grilled Venison and grilled corn on the cob; Roasted Chicken tacos; Grilled shrimp with Tomato Bean Salad (from Eatingwell’s In Season); Roasted Tofu and Veggies over soba noodles; Grilled Pizza and salad; Venison Bulgogi (Korean lettuce wraps)
