This Week’s Meal Plan: 6/27/2011



We had a busy weekend with family celebrating Grandpa Nono’s wonderfully long life of 92 years and answered lots of questions from our three year old about death and funerals.  It is good to be home and getting back to cooking.  Next weekend we plan on doing a campout in our backyard with our neighbors – I’m excited to do some foil packet meals over the fire and breakfast over the fire too.  I just hope the mosquitoes stay away one more week.

Italicized items below are already in my pantry, fridge or freezer.

Breakfast
Peach and Blueberry Kale Smoothies; Overnight Peach Steel cut oats (x2); Blueberry Buttermilk Pancakes and Bacon (over the fire); Savory Collard Breakfast Squares; Cereal and Fruit; Yogurt and Granola with frozen peaches

Lunch
Leftovers; PB & Strawberries; Tuna Quesadillas; Fire Roasted Hot Dogs/Brats; Birthday Party

Snacks
Trail Mix; Cheese & Crackers; Nuts and Fruit; Apples and Almond Butter; Carrots & PB; popcorn with olive oil and sea salt; Snap peas

Dinner
Pasta & Squash with Tomatoes, Basil and Pine Nuts (Cook’s Illustrated); Greek Venison Pitas (Cooking Light); Grilled Walleye and Roasted Kohlrabi; Tofu & Broccoli Quinoa; Chicken and Apple Fennel Salad; Foil Packets; Homemade pizza
