This Week’s Meal Plan: 7/4/2011


Happy Independence Day to all of you!  We celebrated the holiday with a backyard cookout and campout (sort of - the kids didn't make it through the actual sleeping in the tent part) with our neighbors, but couldn’t find a parade in our area today.  For some strange reason the parade is tomorrow when everyone goes back to work.  Our CSA seems to be in full swing already, we've gotten lots of greens, summer squash, and broccoli to name a few.  We got our first beets of the season last week and I am very excited to eat them.  Next weekend we are hoping to go to the local waterski show on Sunday as we have not been to it yet this year.  We like to pack a picnic dinner and hang out by the lake for the evening.  The kids are fascinated by the show!  Summer is filled with so many fun outdoor events and lots of fresh veggies.

Italicized items below are already in my pantry, fridge or freezer.

Breakfast
Savory Collard Breakfast Squares and Honey Raisin Pecan Challah; Cereal and Fruit; Whole Grain Banana Flax Waffles (from freezer);  PB & Banana Smoothie; Whole Grain Rhubarb Muffins; Yogurt and Peach Butter; Eggs and English muffins

Lunch
Leftovers (x4); Hummus Wraps; PB&J; Tuna Quesadillas

Snacks
Hummus and Veggies; Frozen Smoothie Pops; Kohlrabi; Apples & PB; Trail Mix; Cheese & Crackers; Chunky Monkey Milkshake (frozen banana, milk, walnuts & ovaltine)

Dinner
Chicken Parmigana Packets with Salad and Pasta; Peanut Noodles with Kohlrabi Greens; Sausage Stromboli with citrus collards; Mediterranean stuffed summer squash with salad and homemade bread; Venison Fajitas with Mexican Coleslaw; Grilled Shrimp and Veggies; Picnic Fare: Beets & Greens Salad, hummus and veggies, and cheese and crackers
