This Week’s Meal Plan: 6/6/2011


Whew, we just got home from our vacation, two days later than we had planned.  I’m thankful to be home, but a bit scattered after all that happened last week.  We have lots of fresh greens from our CSA and fruit from our trip – we picked up oranges and grapefruit in Florida, peaches and pecans in Georgia.  We actually don’t have to do a lot of grocery shopping this week – YEAH!  We just ate a delicious salmon dinner, thanks to our neighbors for the salmon!  I was planning on a quick frozen pizza, but they had taken out some salmon and weren't able to use it before their camping trip - so I made a quick grilled salmon and salad dinner and it was truly amazing!  The kids cleaned their plates!

Italicized items below are already in my pantry, fridge or freezer.

Breakfast
Yogurt with homemade granola and peaches; Peach and Blueberry Smoothie; Steel cut oats with dates and grapefruit (x2); Peach oven pancakes; Eggs, Grapefruit and toast

Lunch
Left-overs; Bean Quesadillas, Turkey Sandwiches, Hummus Wraps

Snacks
Popcorn with olive oil and sea salt; cheese and crackers; apple slices with PB; string cheese and fruit; veggies and hummus; Frozen smoothie pops

Dinner
Grilled Salmon and grapefruit saladTofu Stirfry with joi-choi; Grilled Venison SaladMirin Glazed Salmon with sauteed pac-choi; Grilled Chicken and Salad; Broccoli Raab Pasta and Salad; Ottolenghi Red Rice and Quinoa
