This Week's Meal Plan 5/23
I am so excited, we are actually going to take a vacation at the end of this week. So this week is all about easy meals, but keeping it healthy. Especially because Ryan will be out of town for a couple of days for work this week too.
Italicized items below are already in my pantry, fridge or freezer.
Breakfast
Cinnamon Swirl Raisin Pecan Bread (recipe coming) with cottage cheese and fruit; cereal with strawberries; steel cut oats with dates and nuts; granola with yogurt and fruit; scrambled veggie & quinoa eggs (an idea from a friend)
Lunch
Left-overs; PB&J; Tuna Quesadillas
Snacks
Apples with almond butter; veggies and hummus; popcorn with olive oil and sea salt; pretzels & nutella; fruit and string cheese
Dinner
Venison Sloppy Janes (my husband doesn't think they can be called Joes since they contain lentils, sweet potatoes and wheat berries) on whole grain buns with salad; Spaghetti with Turkey meatballs and salad; soup from freezer; BBQ Beef with greens (yeah CSA starts this week) and left-overs.
